Candover Brook Brut NV
A delicate balance of freshness and richness.
Our maiden release, based on the incredible 2018 harvest and all from our own single vineyard in the heart of our regenerative farm estate in Hampshire. Nothing is rushed here, the wine develops in bottle for over 3.5 years at least. We don't like to brag but it's also won a multitude of medals!
Tasting Notes
On the nose, floral notes compliment nutty and toasty overtones. Bubbles are generous without being overwhelming. The palate starts with hints of floral citrus. Then creamy vanilla and orchard fruits on the mid palate. Long, streamline and mineral finish.
Harvest
The grapes were hand harvested, whole bunch pressed and vinified in temperature controlled stainless steel tanks to retain their youthful fruit character. The wine underwent malolactic fermentation. Made from 58% Chardonnay, 28% Pinot Meunier, 14% Pinot Meunier. Base wines from the 2018 vintage were blended with 3% reserve wines from a solera dating back to 2011, resulting in additional aromatic complexity. After bottling, the wine was aged for a minimum of 42 months on lees. Following disgorgement, the wine received 5.75g/l dosage.

Rare Crayfish at Candover Brook
Candover Brook is named after the chalk stream that runs through our valley, chalk streams are almost uniquely English and our chalk soil is the key defining element of our vineyard’s topography. The Candover Brook is one of the few remaining habitats of the rare English white-clawed crayfish. Both the brook and its crayfish are celebrated in the design of our label.

Purchased and saved it for a beautiful summer day. Packed into a picnic hamper & taken out into the greenery of nature & this certainly didn’t fail to make an afternoon, an occasion.
Served with picnic food, or a fantastic meal, the crisp notes of this will complement any pallet. Especially with chicken or a beautiful fish dish, or even just over a nice light salad.. this is certainly a good addition to any table.
Very pleased with our impulse buy from what must be our most local vineyard. Lovely balanced wine, not too dry, lots of soft bubbles, totally delicious and moreish. Looking forward to trying the rosé.
